Apple Cake Recipe

By popular demand, I give you my apple cake recipe. My good and dear friend Amanda gave me this recipe, it’s fantastic served with creme fraiche hot or cold and best stored out of reach of children πŸ˜‰

3 apples (or two apples and a ripe banana)
1/2 cup sultanas
1/2 cup brown sugar (I prefer unrefined sugar)
1tsp vanilla
1/2 tsp mixed spice (or to taste)
250g butter, melted
1 egg
1 1/2 cups self-raising flour

While melting the butter in a pan on low heat, peel and slice apples. I like it quite chunky but you can do it however you like it. Put the apples in a mixing bowl together with the sultanas, sugar, vanilla and mixed spice. Whisk the egg into the melted butter and pour over the fruit. Add the self-raising flour and mix until all the ingredients are moistened. The mixture will seem far too thick to be cake-y, this isn’t your typical sponge batter so don’t be concerned. Put the mixture into an 18cm springform cake tin and bake for about 30 minutes at 180 degrees celcius.

Next time I make a cake I’ll amend this blog entry to include some photos, which you might find helpful. The cake is best stored uncovered as it tends to go a bit soft if you cover it. Even after three days (if it lasts that long) the cake still tastes great, particularly with creme fraiche and coffee πŸ™‚
