Pork and Cider Stew

I had a request from a blog on slow cooking for my recipe for Pork and Cider stew. Or maybe it was one of my alcoholic friends *lol* Anyway, here it is. It’s basically a Jamie Oliver recipe, but instead of faffing around with frying stuff in a pan and cooking times, I just throw all the ingredients, vegies first, into my slow cooker at about 8am then forget about it until 5 or 6pm. The vegies are best chopped up quite chunkily as they cook faster than the meat. If you’re using fresh herbs, it’s best to put them in an hour or so before you want to serve your dinner. Another option is to pop some dumplings in, again about an hour before you want to eat. They taste nommy!!

What you need:
2 sticks celery
2 medium onions
2 carrots
1 heaped tablespoon plain flour
1 400g tin of chopped tomatoes
3 sprigs fresh sage
500g diced pork
500ml cider of your choice

Put the fresh vegies in the bottom of your slow cooker, the meat on top, then the tomatoes, flour and pour the cider over the top. Give it a bit of a stir, pop it on low for 6-8 hours. Serve with rice, potatoes or dumplings.
